Jalapeno Popper Dip

With my jalapeno plants still producing, and my love/hate relationship with jalapeno poppers (love the cheesy, spicy goodness; hate the mess of frying), I thought I would try a dip instead.

I put about 1/2 cup in a bowl and microwaved it on high for 1 minute (stirring at 30 seconds), which turned it into a bowl of hot molten lava deliciousness.  If you weren’t in a hurry, you could put it in the oven at 350F until bubbly and brown (stir occasionally). Or perhaps use it as a base for a grilled cheese sandwich? Or just eat it by the spoonful? If you have too much (what?!) you can even freeze it. Oh, the possibilities.  How will you use it?

Years ago, I went to a baking exchange and received this recipe for a baking mix.  I’ve used it ever since for quick pancakes, biscuits, waffles, muffins and coffee cakes. I can throw it together in minutes, with baking supplies from my pantry.  And (while I haven’t added it the recipe card) I’ve started using organic coconut oil instead of vegetable shortening with great results.  Let me know how you like it!

Think S.M.A.R.T.

S.M.A.R.T. Goal SettingHappy New Year!  (I know, I’m late)

You know what’s funny about New Year’s Resolutions? We generally know what we want to change, sometime back in October, but hold off so that we can make this New Year’s Resolution, only to break it by the first week. Kind of setting ourselves up to fail, is it not? Yet, we (I) do it, year after year.

Well, not for me! No sir! I’m getting off the merry-go-round and this year, I’m setting goals. What’s the difference (you ask)? Well, effective goals follow a simple recipe.  Just think S.M.A.R.T.

So, I’ve sat down, thought about what I want to accomplish this year, and set some goals.  Some of them are the usual ones (lose weight, be more organized, stop being so sarcastic) but this time with steps I can take to actually achieve them, or at least move closer to them! Others are new (take better pictures, foster relationships with family and friends) and they have actions to take as well.  I’ll share more specifics later . . .

But now, I want to hear from you.  what goals are you setting this year?
